Cream Cheese Frosting

We all know and love buttercream - but, there are some treats that just wouldn't be as good if they were frosted with anything other than a sweet and tangy cream cheese frosting!


The first time I made cream cheese frosting was what I believe to be one of the best days of my husband's life - haha!! He fell in love at first bite! This frosting compliments desserts such as carrot cake, red velvet cake, cinnamon buns, and even classic flavored cakes like vanilla or chocolate.


It's creamy texture also makes it a breeze to create a smooth and even look when decorating cakes. In my opinion, when it's made right, it can definitely compete with traditional buttercream frosting.


Ingredients

2 sticks of unsalted butter, softened

2 blocks/16 oz of cream cheese, softened

2 lbs powdered sugar, sifted

1 tsp vanilla extract


Instructions

1. Add butter to a mixing bowl. Whisk on high for 2 - 3 minutes, until light, fluffy and white in color.

2. Add cream cheese and whisk on high for another 2 - 3 minutes, until well incorporated with butter.

3. Turn off mixer and scrape down sides and bottom of the bowl. Add in half of powdered sugar (1 lb). Turn mixer on low, slowly increasing to high speed - this will keep all the powdered sugar in your bowl, rather than all over your entire kitchen. Once the first half of the sugar looks almost completely mixed in, turn off your mixer and add in the rest of your powdered sugar - remember to start on low speed and gradually increase to high.

4. Add vanilla extract and continue to mix for another 2 - 3 minutes.

5. Turn mixer off and scrape all sides and bottom of your bowl, and mix well for 1 more minute.
